Join local cheesemaker Laurel Shulman to demystify your favorite item in the fridge: cheese!
Laurel will begin with a broad introduction to cheese, discussing its chemistry as well as the culture and history that surrounds it. This includes how traditional types of cheeses reflect the environmental conditions of certain regions. (French cheeses are typically small, fresh and soft, as the French usually had a milking animal at home to produce the cheese, whereas Swiss cheeses are usually low moisture hard cheeses that travel well, since milking animals were grazed far away and were transported larger distances.) The cheese making process can be broken down into a series of steps that vary for each type of cheese, which will be thoroughly explained.
The cheese making portion of this workshop will include processing fresh cow’s milk into two different cheeses – mozzarella and farmer’s cheese. We will be learning about how to make your favorite cheeses at home. Each participant will take home 2 pieces of cheese.
Participants should come dressed ‘cheesily’ that is, prepared to work in a kitchen, aprons strongly encouraged. Please bring a container to transport your delicious cheeses.

About the Instructor
Laurel Shulman found herself in the cheese making world as most people find themselves interested in food – by eating something delicious and wanting to know more. For over two years she made delectable goat and cow’s milk cheese of all varieties with the Hillsborough Cheese Company. She now works at Vimala’s Curryblossom Cafe, but loves to share her cheese knowledge with others.
Originally from Florida, Laurel moved to North Carolina after graduating from New College of Florida, where she wrote her thesis, “All Organic food is (not) Created Equal.” When she isn’t making or eating cheese with friends, she spends her time reading fiction, working in the garden at her home, taking hip hop dance classes and going to the batting cages.
